What we control at origin:
Tanzania allows 8 full defects per 300g for FAQ export grade. Our specialty lots from Mbinga are <3 defects. Fewer defects = no “potato”, no ferment, no bitter surprises. We check every lot under UV light to catch defects human eyes miss.
We ship at 10.5-12.0% moisture. Too wet = mold risk. Too dry = loss of aroma. We also measure density. High-density Mbinga beans can handle darker roasts without baking.
